History - Hilary's Cheese was founded in 2001 by Hilary and Patty Abbott. Located in the Cowichan Valley on Vancouver Island - the Abbott's are pleased to partner with local producers of quality cow and goat's milk in order to produce full flavoured delicious dairy products. Ours is a family business which owes its success to tremendous customer support and unparalleled assistance from family and key community-minded individuals.
Fabrication- Our farm is situated on the Wine & Culinary trail in the heart of the Cowichan Valley. The name Cowichan is derived from the First Nations description of our area - Land Warmed by the Sun. True to form - our home is located where the climate is very benign with ample amounts of rain, sun and growing days to ensure that our farm families can grow beautiful forage for the herds and flocks to graze upon. This is the first and most important ingredient towards making quality cheese. With access to quality milk coupled with artisan techniques we produce small hand-made batches of cheese each week. We continually learn and aspire to produce West Coast cheese inspired by the masters of France and Italy. We offer fresh cream style cheeses, bloomy white moulded encrusted cheese similar to Brie and Camembert, washed-rind semi-soft rounds we call tomes and hearty blue-veined cheese varieties.

The Cheese Shop - Situated in the picturesque seaside village of Cowichan Bay, Hilary's Cheese & Deli offers visitors a chance to relax and savour cheeses we produce locally and those that are brought in from near and far. Our lunch counter serves homemade soups daily paired with sandwiches made at the neigbouring bakery - True Grain Bread. Stop, inhale and enjoy the flavours of the Cowichan Valley while relaxing in our cozy lounge overlooking Cowichan Bay.
Shoppes - We strive to have our cheeses available at fine shops and restaurants on Vancouver Island, The Lower Mainland of British Columbia and Whistler. If your favourite shop or restaurant doesn't carry our cheese please ask that they contact us.
